Pulled Sloppy Joes

These are rich and meaty pulled beef Sloppy Joes.  It is a really easy recipe you just need a bit of time.
Big Pete went all cave man when I made these. Here is a picture of him when I said supper was ready!

You will need:

  • 1 pound of beef -steak or stewing beef cubed
  • 1 onion
  • 4 cloves garlic
  • 1 can beer
  • 1 tbsp Italian seasoning
  • 1- 2 tbsp hot chili jam
  • 1/4 cup ketchup
  • salt and pepper
  • 3 tbsp Worcestershire sauce
  • 1 onion sliced thin for rings on top

Step 1: I usually buy a couple of steaks or you can use a package of stewing beef . You will be cooking the beef until it is fall apart tender. Chop the steaks into approx. 1 inch cubes. Dry with paper towels.
Step 2: in olive oil saute meat until water is all evaporated and meat starts to brown and caramelize. 
Step 3: in a food processor add onion and garlic and puree to fine. Add onions and garlic to meat and allow the moisture in the onions to help steam the bottom of the pan so you can scrap off all the meat bits. This is good flavour and you want all of it. Add Italian seasoning, hot chili jam, ketchup, Worcestershire, salt, pepper and beer. Reduce heat to low and cover. 
Step 4: Let cook slowly for 1 hour. Stir from time to time to make sure you have enough liquid. If you need to add water to continue cooking. After 1 hour remove lid and cook another hour adding more water as necessary. After 2 hours see if you can pull meat apart with 2 forks. Pull meat and let water slowly evaporate until you get a dense rich sticky sauce.
Step 5: thinly slice an onion and toss rings in some flour. 
Step 6: fry until golden. Remove to paper towels and sprinkle with salt and pepper.
Serve on soft rolls with the crunchy onion rings. There is nothing else necessary to add. It’s rich and meaty and sticky and even Big Pete loved it with the onions (he usually hates onions)
